Meet Chiyon, one of the DC area’s most brilliant pastry chefs! She is located in Fairfax, VA, she creates the most scrumptious baked goods, her business name is Sugar Defined, and all items are made to order with so much love, dedication, and flavor.

Chiyon provides confectionery delights that are made from scratch with no use of additives or preservatives. With special care and attention to detail, the recipes have been refined throughout the years to deliver the highest quality in taste. Satisfy your sweet tooth with the wide array of products she has to offer!

My favorites? It’s difficult to pick and choose. I’ve ordered multiple assortment boxes for myself, my family, and friends. I also ordered my anniversary cake from her (SCRUMPTIOUSLY made, by the way), so there is too much deliciousness to really pick a fave. Right now, I’m craving her mini mousse cups!

Q&A

At what age did you begin cooking/baking (even if pretending to cook/bake)?
I baked once or twice before I was a teen. I started baking a bit more in my early 20s.

When did you know that cooking/baking was something you wanted to do professionally?
I never thought I’d be baking professionally, but I’ve invested so much in Sugar Defined, that I feel the need to see it through to how far I can go.

Who/what inspired you to begin your cooking/baking journey?
Many years ago, I learned how to bake as an expression of love.

What is your favorite food/drink/dessert/dish to make? Your specialty?
I enjoy baking cakes and finding new ways to decorate them. My style is very simple and minimalist, but I still like to make each unique in it’s own way.

If you had to eat the same meal + dessert every day, which meal + dessert would those be?
A proper baguette, with European butter, and cheese. For dessert, a slice of chocolate cake, but not just any chocolate cake, MY chocolate cake.

Which dish/food/drink/dessert is the most requested from your clients? From your family?
Client favorites are the brownie cookies, cupcakes, flan, lemon blueberry cake, strawberry shortcake, and tres leches cake.

What is the most difficult ingredient to work with?
Chocolate - it’s very sensitive to changes in temperature.

What other hobbies/interests do you have?
I love food and travel. I will travel for food. When I'm not eating or traveling, I enjoy reading, hiking, practicing yoga, and building puzzles.

Other things people should know about you?
I am a self-taught baker and learning as I go. People often ask what my baking style is. I’d say it’s American, influenced by my multicultural background. The balance between bold Latin flavors and subtle Asian sweetness.
